We have an exciting opportunity for a talented Senior Sous Chef to join our Banqueting Kitchen team. Working within a fast-paced, high-volume operation, you will play a key role in delivering exceptional culinary experiences for large-scale conferences, weddings, banquets and prestigious events. WHAT ARE WE LOOKING FOR ...

This is an exciting opportunity for an experienced and ambitious chef with a passion for large-scale event catering and operational excellence. The successful candidate will have previous experience in a senior kitchen role within a high-volume hotel, conference, banqueting or events environment. You will possess excellent organisational skills, a strong understanding of food production and service logistics, and a proven ability to lead and motivate a large kitchen brigade. We're looking for someone who thrives under pressure, remains calm in a demanding environment, and takes pride in delivering consistently high standards at scale. Experience delivering large functions, conferences, weddings and banquets is highly desirable, along with a commitment to food quality, guest satisfaction and team development.

WHAT YOU'LL DO ...

As Senior Sous Chef, you will support the Executive Head Chef and Executive Chef in the day-to-day operation of our busy Banqueting Kitchen, ensuring the successful delivery of high-quality food for a wide range of events, from intimate celebrations to large-scale conferences and banquets. You will assist in planning, organising and executing high-volume food production, ensuring consistency, quality and presentation standards are maintained at all times. Working closely with the wider culinary team, you will help coordinate service for multiple events simultaneously, ensuring each function is delivered efficiently and to the highest standard. You will lead and inspire a large kitchen brigade, providing guidance, coaching and support whilst maintaining a positive and productive working environment. You will take responsibility for stock control, ordering, food safety compliance, HACCP procedures and effective kitchen administration. The role requires exceptional organisational skills and a hands‑on approach, ensuring all operational requirements are met, service deadlines are achieved and guest expectations are exceeded. You will also work collaboratively with Events, Operations and Stewarding teams to ensure seamless event delivery across the Resort. Ultimately, you will play a key role in maintaining the reputation of The Celtic Collection as a leading destination for conferences, banquets, weddings and world‑class events.
