Chef de Partie | The Rutland Hotel, Edinburgh

We're chasing our second AA Rosette, and we're looking for a quality-focused Chef de Partie to help us get there.

Our kitchen serves three distinct venues, all built on the best sustainably sourced produce from Scotland's top suppliers. Kyloe is our 1 AA Rosette steakhouse. The Huxley serves American soul food with Scottish flair, from breakfast through dinner. Understory is our hidden West End cocktail bar, a "Five-Star Dive Bar" serving sharing plates. Three menus means real variety in a single role, and plenty to learn.

You'll take ownership of your section in a busy, high-volume kitchen. Ideally you're already a CDP, or a strong Demi ready to step up, with experience in quality-led kitchens. Rosette-level experience is highly desirable.

What you'll do

• Run your section to a consistently high standard, every service
• Support the Head Chef and Sous Chef across all three venues
• Contribute ideas to seasonal menu development
• Mentor commis and junior chefs on your section
• Uphold allergen, food safety and Food Standards procedures
• Keep waste down and help control costs through smart use of ingredients
• Help drive the kitchen towards 2 AA Rosettes
