Sous Chef

Fancy working in our busy gastro pub kitchen? We cook everything from scratch using local artisan suppliers, and we're looking for a Sous Chef to join the team at The Bull in Otford. You'll assist the GM and Head Chef with the day to day running of a £1-million business, sharing responsibility for the team, shift management, the menu, growing turnover and planning events. In the Head Chef's absence, the kitchen is yours. We change the menu daily so we can make the most of supplier offers and the day's catch. A few seasonal dishes stay put to keep the company feel, but beyond that you and the Head Chef have carte blanche to develop it. We look for a minimum of 72% GP on food and currently run at 72–75%. We believe a successful business needs good people in it, and the ethos we ask of the whole crew is simple: the answer is yes, what's the question. You'll grow a team around you with that same attitude and ambition.
